THE CONCEPT
“Angel’s Share” is a term that winemakers have affectionately given to the portion of wine lost through
evaporation from the barrel during a wine’s ageing process. Myth has it that as an angel ‘accepts’ the
wine, she graciously returns many extra dimensions of flavour to the remaining wine in the barrel.
At Angel’s Share, The Ninth Vine’s new establishment at Dempsey Hill, more than 700 labels of the
finest wines await your drinking pleasure with 50 of these available by the glass – a first in Singapore.
Be pampered in your very own hide-away where you can both see and be seen. Enjoy the perfect
ambience for unadulterated appreciation of the finest wines in our Restrobar, matched only by our
specially-paired wine cuisine. Don’t take the heady experience too seriously however, because this cool,
casual hangout set in the midst of nature is sure to attract both angels and even the occasional
naughty devils in equal measure!

AMBIENCE
Nestled amidst the lush, peaceful greenery of Dempsey Hill, right outside the bustling Orchard Road
area and a stone’s throw from the upmarket suburb of Tanglin, the vibe surrounding Angel’s Share is
one of relaxed sophistication. The bold, mirrored entrance foyer welcomes guests into the spacious,
high-ceilinged bar and dining area within. Laid out like a catwalk, the path running through Angel’s
Share is an apt reflection of the types of customers it is bound to attract.
Diners and VIP guests have the option of relaxing on inviting, low-set settees, where they can enjoy the
full array of perfectly-matched, top-notch wine cuisine. The menu is cosmopolitan and fresh, with a
menu full of dishes to suit all palates, whether as a cheerful snack or a satisfying meal.
For those who intend purely to imbibe, the outdoor area presents itself as the perfect place for a
relaxing cocktail, with its harmonious suite of lounge furniture. With an unmarred facing that is far
from the madding crowd, customers can fully enjoy their specially chosen wine, cocktails and single
malt whiskies.

RESTROBAR
Angel’s Share’s Restrobar / Restrowine is an interactive medium where wine, cuisine and ambience
equate stylish indulgence. The focus will certainly be on the wines; from the extraordinarily
comprehensive range available either by the bottle or by the glass, to the way we seek to create perfect
drinking conditions, where a glass of wine promises to be so much more than just another drink. With
our philosophy of serving food that is ideally paired with food – “wine cuisine,” in other words – both
the wining and the dining components of an evening with Angel’s Share are blended in total harmony
with each other.
For non-wine drinking guests, Angel’s Share’s full-service bar serves popular beers by the bottle,
draught beer on tap, 25 renowned labels of single malt whiskies and a range of popular cocktails
delectably concocted by Mo, our bartender formerly from Attica. Prepare to be dazzled by the launch
of Angel’s Share’s new wine cocktails debuting this October.

WINES
Hand-picked by our Director of Wines, Amir (currently pursuing his Master Sommelier of Wines), our
enviable 700+ label wine list concentrates on four prominent wine regions in Australia, California,
France and Italy. Thanks to the technologically advanced PEK Wine Preservation Systems imported from
the USA, there will also be a comprehensive 50 wines available by the glass – a first in Singapore.
Unlike most other wine-by-glass programs, ours is truly an eye-opener replete with quality offerings
from all the major wine regions of the world
Signature Wines – All these wines are acquired with the utmost care. We searched far and wide to
introduce absolute quality into our wine list and we take great pride in all those that made the list. Our
favourites include:
- Rockford (Australia) – Ranked “Exceptional”, the highest category in the latest edition of the
renowned Langton Classification of Wines. Wine critic, James Halliday, described Rockford
wines as “the living treasures of Australia”.
- Chris Ringland (Australia) – Also known as The Three Rivers, this has to be a cult wine that
lingers on every wine connoisseur’s wish list. Only a limited 700-1000 bottles are made every
year. Revered wine critic, Robert Parker, has consistently rated most of this label’s vintages
between a heady 97 to a dizzying, perfect 100. The market price of a bottle is in excess of USD
1000 per bottle… That is, if you can even get your hands on one. To be drinking it in a wineby-
glass program has got to be the ultimate extravagance.
- Whistling Eagle (Australia) – A cult wine in the making, Whistling Eagle hails from Heathcote.
All wines are sold prior to arrival in Singapore. Angel’s Share will be one of the few places to
sample and indulge in the Eagles Blood Shiraz from Whistling Eagle.
And what about the traditional powerhouses of the Old World? The top five First Growth (Premier Cru)
wines from Bordeaux, the Syrah from Rhone, the Burgundies, the Super Tuscans from Italy and the cult
Californians, will definitely be vying for attention.

CULINARY TEAM / WINE CUISINE
The culinary team is ably led by Executive Chef, Jacob Ong. Once from Centro Fullerton, Chef Jacob was
promoted to head the kitchen in Centro Jakarta. Expressing his desire to return to Singapore, Angel’s
Share is most fortunate to have Chef Jacob spearhead the challenge of leading his team to create what
would undoubtedly be, the first Wine Cuisine in Singapore.
Wine Cuisine – it’s all about flavours; identifying, interacting with and appreciating basic flavours.
While most chefs may attempt to eagerly introduce layers of flavour into the cuisine, Angel’s Share
seeks to get to the core flavours. Understanding essential flavours, retaining them and building them to
match the array of flavours from the wines will be a key objective. (Inauguration of the Wine Cuisine
menu is scheduled for October 2007)
The present, classic menu will showcase a series of “Small Plates” (Petits Plats) – An array of delightful
expressions of unique flavours to complement the wines. Here at Angel’s Share, while aspiring to
achieve balance in wine and food, we are ready ourselves to be challenged on two fronts – matching
food with wines, and vice versa. Either way, we seek to enjoy these indulgences without getting too
technical in the process.
There is also A daily set dinner of four courses is available, with an option to match each course with
recommended wines.

DESIGNATED DRIVER PROGRAMME
A huge part of the Angel’s Share experience is its wines. While we want our guests to completely
experience optimal indulgence from the very best that our wine, cuisine and ambience can offer, we
also believe in safe indulgence. With great alcohol and great wines comes great responsibility.
I
ndulgence should not lead to negligence. For every designated post-indulgence driver at each table,
Angel’s Share will serve a series of non-alcoholic beverages in place of wines and alcohols with our
compliments.
Please check with our manager-in-attendance about the Designated Driver Program, or DPP, which also
includes voluntary breath analyzer tests, taxicab bookings or having our valet drive you back in the
comfort of your own vehicle.
