Here’s another great example of that spreading phenomenon, the fixed menu restaurant. Here, let me assure you, you don’t want a menu: choose the degustation and let Chef Dorin Schuster choose for you. And what a wonderful treat you’ll be in for. Freed from the shackles of having to offer ‘choice’, Dorin can choose the very best seasonal produce on the day, which sets him apart from most of the other chefs in town (many of whom seem to feel obliged to serve sea bass every day regardless of how good or bad it is).

While Cherry Garden’s elegant and modern Oriental decor attracts suited executives at lunch and couples looking for a Chinese restaurant with a romantic ambience for dinner, it is its authentic Cantonese fare that keeps me coming back. I recommend that you go for a round of soups to start your meal: the pork and winter melon delight was my favourite, with its unusual sweet, astringent and meaty flavours, with runners up being the shark’s fin with crabmeat and the full-flavoured hot and sour.

Adjacent to the rooftop pool of The Oriental, Singapore, Dolce Vita has the atmosphere of a laid back Mediterranean resort. The white washed walls and stone floors create a bright and airy space during the day and a romantic, tropical feel by night, and panoramic views of the city a simply spectacular. The food is grounded in the techniques and flavours of Italy and France, and lifted by the clever and sparing use of North African and Asian influences.

A seafood counter is laden with oysters in their shells, waiting to be shucked to order; thickly sliced maroon-coloured smoked salmon lies on a platter, the fat on its surface shining, and bizarre looking (but delicious) slipper lobsters, still alive, nervously wait for someone to order them. Sushi chefs industriously slice fresh sashimi from glassy pieces of hamachi and hirame

One-Ninety is a great place for a quick, good value buffet lunch in the chic surroundings of the Four Seasons Hotel. The buffet boasts a variety of good fresh food, from dainty canapés and hors d’oeuvres to a nice variety of mains and desserts, along with made-to-order food such as creamy milkshakes and tenderloin burgers. I went for one of each – the finely hand chopped tenderloin patty in a soft floury bun with a generous slab of gooey seared foie gras was almost sickeningly indulgent
