A regal interior, fine linen, crystal glasses, delicate china, impeccable service and a refined sensibility, food wise, all come together to make dining at Crystal Jade Golden Palace an true gastronomic revelation. Every course is prepared with the season’s best ingredients and served with style: this really exemplifies the best of traditional Teochew and Cantonese cuisine. Discussing the menu with the waitress was actually surprisingly enjoyable – she was very knowledgeable and displayed a genuine love of food. Signature dishes included a braised supreme bird’s nest with ham, which was surprisingly good for a dish of boiled swift’s spittle. On the other hand, the steamed live coral trout, or leopard fish, amazed with its gruesome simplicity and freshness. But best of all was the Cantonese-style stewed beef short ribs – sticky and subtly flavoured with star anise. These dishes may sound deceptively simple, yet your first bite will speak volumes about the chef’s skills. Leave space too, for the traditional orh nee (yam paste) pudding: a must.
