This is a restaurant that is consistently good, and three generations of Hung Kang diners can testify to this. The roast pig (ordered in the morning for dinner) is still one of the best in town: moist, sweet meat and crunchy crackling – a real feast dish for those special occasions – its spicy fragrance wafts through the dining hall every time a platter is brought in, making everyone drool. The Teochew-style simmered fish was lightly cooked in a good fish stock until it was falling off the bone and represented authentic Teochew cuisine at its best, and made a good substitute for the pig if you haven’t got enough friends. Another favourite of mine – and another good roast pig substitute – is the unctuous, fatty, braised belly pork with fluffy home-made rice flour buns – the best pork sandwich you will ever have. And don’t forget to order a suitable accompaniment either – try the plate of yellow noodles fried with crispy fish slivers until crunchy and sticky: a good side dish that goes with any of the above. Other must-tries included prawn rolls and oyster omelette, but leave room for the Chinese restaurant finale of orh nee, or yam paste pudding. Soft, creamy and of just the right level of sweetness, this really reminds me of my mum’s pumpkin pie, and makes a perfect ending to a superb meal.
