Lei Garden is known throughout Singapore as a well-established, reliable place to get authentic Cantonese food. I absolutely love their special double-boiled soup of fish maw, sea cucumber and various herbs – the unusual jelly-ish textures from the maw and sea cucumber absorb the flavours of the broths and herbs fantastically well. Before moving on to mains I went for a palate cleanser: the simple, well-presented dish of steamed beancurd with ginkgo nuts – floral, unusual and tasty. For my main dish, the “Seafood Combination” was an education in contrasting tastes and textures : velvety-smooth handmade noodles soaking in a tasty, steaming superior stock; still-crunchy bean sprouts lending an understated flavour; chunky slices of firm white garoupa, lightly fried and tossed in a thick sauce together with astringent bunashimeji mushrooms: crunchy, fresh chillies and spring onions: all this came together to create a immensely satisfying dish. While the classic dishes are pleasant, pushing the envelope a little further when ordering might heighten your dining experience at Lei Garden.
Peking Duck here is a must, Lei is also well known for their dim sum… make your reservations early.. or be disappointed.
