Perched on the 70th floor of Swissotel The Stamford, there is no better view in Singapore. On clear days, you can get a good view of the Singapore skyline with a good chunk of Indonesia thrown in — and this will surely save the dinner conversation should it ever falter. And this is a good thing, because the food probably won’t. Don’t get me wrong, the food here is delicious, but there are certainly no surprises here: seared foie gras that is melt-in-the-mouth perfect and beef tenderloin that is cooked to the second how you like it - indulgent and delicious, of course; good wine list, yes; great service, definitely; revelatory, err, no. The starters of air dried duck with a red banana sauce, and the refreshing pomelo salad with its Thai influences did somewhat successfully injected interest into the proceedings. And the well-thought out cheese platter — our choice over dessert — showed much effort, but also something of an identity crisis, given the ethnicity of our starters. Still, we didn’t mind, where else could you get a view like that?
